### Overview
I lean very heavily on rice and rice products in my cooking as someone who generally keeps a gluten-free diet. It's a quick, easy, and healthy carbohydrate and the more I lean on it the more it surprises me with its versatility.

### Preparation
#### Rinsing
This process removes the excess starch in order to give a cleaner and less mushy texture to the rice. In general, rinse your rice prior to preparation unless the dish requires extra starch such as risotto or congee
In order to rinse your rice simply run cold water over your rice in a pot, gently massage the rice, and then pour out the excess water. Repeat this process until the water runs mostly clear (usually 3 or 4 times).
#### Cooking
There are a million ways to cook rice, but I most frequently do so in my [[Instant Pot]]. Use 1:1 rinsed rice to water, cook on high pressure for 3 minutes, and let release naturally for 10 minutes before manually releasing the rest of the pressure (if any) and serving.
